The Fancy PIg Story
In 1977, a local husband and wife team opened a small butcher shop to serve the residents of the Humboldt Park neighborhood. Theodora and Constantine Kardaras used their initials to name it T&C Meat. Although they started the business as a butcher shop, they quickly began catering because roast pig was in high demand among neighborhood residents for holiday parties and family occasions.
The signature dish was roast pig, but the original catering menu offered a few other selections. The store was located at 2814 W. North Ave., right across the street from Humboldt Park.
Growth and Transitions
It wasn’t long before T&C Meat was the local go-to destination for parties. Demand for roast pig continued to grow. Sadly, the original owner passed away in 2004.
Not wanting to deprive the community of its specialty catering company, Cermak Produce approached the late owner’s son about housing it within Cermak Produce, which is less than 2 blocks away from its original location.
Present Day
Today, The Fancy Pig carries on the tradition that Constantine and Theodora started over four decades ago. The name was changed to honor the company’s signature dish: roast pig.
The catering company underwent several changes to satisfy evolving customer tastes. The menu has grown to over 40 items that accommodate the tastes of both long-time and new customers. Delivery is now available.
It is still a family owned and operated business that will continue to make extraordinary food for those special occasions.
